several people have asked me for veggie recipes. even though i personally haven’t had the avalanche of zucchini everyone predicted, i am hoping you do!
so, here is the recipe. it was sent to me by a former neighbor- thank you J.B.- i hope you all enjoy it!
ZUCCHINI BARS (serves a lot- use a 10×15 jelly roll pan or cookie sheet with sides)
ingredients for crust:
4 cups flour
3 sticks of margarine
2 cups of sugar
1/2 tsp. salt
ingredients for filling:
6-8 cups peeled zucchini, sliced as for apple pie
2/3 cup lemon juice
1 cup sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
cook zucchini in lemon juice until just tender. add sugar, cinnamon, and nutmeg. add 1/2 cup of the crust mixture in order to thicken.
spread 1/2 of the remaining crust mix over the bottom of your pan. bake for 10 minutes. spread filling over crust, and sprinkle the remaining crust mix over the top. pat down slightly. bake for an additional 30 minutes. cool completely before cutting.
