this recipe is amazingly delicious. it requires a bit of fooling around, which i usually avoid in recipes, but this one is worth it.

it’s from pilsbury, and they call it chocolate-glazed fudge cake.

1 cup butter, margarine, or coconut oil

16 oz. semisweet chocolate chips

2 tsp vanilla

6 eggs, lightly beaten

1/4 cup whipping cream

1 TBSP light corn syrup

1 tsp vanilla

3 oz. semisweet chocolate chips

heat oven to 350 degrees. grease 8″ round cake pan. in a saucepan, melt butter and chocolate over medium heat, stirring until smooth. remove from heat and stir in vanilla. when it’s a bit cool, add the eggs, mixing as you add them so they don’t turn into scrambled eggs… pour into greased pan, and set that pan in a 9×13 pan (or similar) and add water into the big pan until it’s about an inch deep (surrounding the round pan)

bake for 35-40 minutes or until center is set. remove cake from water bath and cool on wire rack.

if you want, you can run a knife around the edges after 20 minutes and invert it onto a plate or serving platter.

meanwhile, put all glaze ingredients into a saucepan EXCEPT chocolate. bring to a boil over medium heat, stirring occasionally. remove from heat, add chocolate, and stir until smooth and silky.

carefully pour slightly cooled glaze over the top of the cake, and let it run down the sides.

we usually keep this cake in the fridge, and serve it with whipped cream on top.

cut the pieces small because it is super rich.

i know people have asked for some veggie recipes, but i just couldn’t resisit giving you this one. i made 2 this morning, and we are gonna have some happy neighbors!!
