today’s avoidance of reality is brought to you by: banana bread

i happen to have a really good recipe for banana bread- go figure!- and although i won’t have time to actually bake it until i get home today, i figured i would post the recipe in advance. happy eating!

1- 3/4 cups flour

1-1/4 tsp baking powder

1/2 tsp baking soda

1/3 cup very soft butter or margarine (in case you are new here, i use coconut oil instead…)

1 cup mashed bananas (3-4 of them. and if they are spotted with brown, they will be much sweeter. you can’t use rotten or black  ones, but the closer you can get to rotten, the yummier they will be…)

2/3 cup sugar

2 eggs, beaten

optional dash of vanilla- i use it when i remember

(optional dash of salt- be sure to include this if you are using an unsalted fat like coconut)

cream butter and sugar until fluffy (or until you are sick of waiting- that’s how i roll…). add eggs (and vanilla, if you want,)and  beat. dry ingredients except flour and mix thoroughly. then add flour and mashed bananas- alternating between the two.

pour into well greased loaf pan and bake at 350 degrees for 45 minutes to 1 hour. i sprinkle chocolate chips on top, and some people like to sprinkle nuts or coconut. this is amazing fresh, but also keeps well in the fridge and freezes without a problem.

i usually try to double or triple the recipe. you can also store bananas that are past their prime in the freezer (peels off). add these into banana bread and you would never know they were frozen. enjoy!
