Nantucket (Insert fruit here but I used apricot last week and peaches this week) Pie (based on Laurie Colwin’s A”H Nantucket Cranberry Pie recipe in More Home Cooking)
Mix and stir till smooth: 2 eggs 3/4 c. melted butter 1 c. sugar 1 c. flour 1 t. almond extract (I’ve used vanilla as well and it’s delish) 1/2 t. salt or to taste
Halve apricots or slice peaches and spread on bottom of a 10 in pie plate or similar. Sprinkle with 1/2 c. sugar. Pour batter over fruit and bake for 40 min at 350. Easiest, best summer to fall dessert. Can sub 1/2 cup coconut oil for butter if necessary.

I wish I’d seen this earlier today……I was ‘free ranging’ peaches (wind storm last night, fallen fruit on public property) this morning and had to cut out some industrious insect spots out…..but if I’d seen this first I’d have stopped before I tossed with some sugar and made this for dessert tonight.

How perfect is your timing??!! I walked in the door late, having promised my daughter a yummy something-or-other with all the excess peaches I had — and there in my Inbox was this recipe!!! Made it immediately . . . and we also all ate it immediately. Thanks!!!!!!!!!
